Mushroom Gravy & Cheddar Biscuits Recipe!

A Sunday morning, or any morning for that matter, is a great time to help yourself to some Good ole fashioned Biscuits and Gravy! Enjoy this Recipe Straight from out kitchen right to yours!!!

Hangry Old Man Cheddar Biscuits


INGREDIENTS


Biscuits


2 & 1/2 cups All Purpose Flour + Additional Flour for folding the dough.

1 Tablespoon Aluminum Free Baking Powder

1 Tablespoon Dried Parsley

1 1/2 teaspoons Garlic Powder

1 1/4 teaspoon Salt

1/2 teaspoon Baking Soda

1 Stick Cold Butter

1 Cup Cold Butter Milk

3 teaspoons Honey

1 1/2 Cups of Shredded Cheddar Cheese



Egg Glaze


1 Large Egg

1 Teaspoon Oil



Toppings


Spices and Herbs as desired.


1. Sprinkle your favorite ingredients onto egg glaze.


Preheat Oven to 425 degrees F


Biscuit Dough


  1. Mix all dry ingredients.

  2. Cut Cold Stick of Butter into small cubes or shred with large holed cheese grater.

  3. Add Butter to dry mixture.

  4. Cut Cold Butter Cubes into Dry Mixture with a Pastry Cutter until crumbly or add ingredients into a food processor and pulse until crumbled.

  5. In a large mixing bowl Fold Cheddar Cheese into mixture.

  6. Make a well in the Center of the mixture.

  7. Add Butter Milk into the well.

  8. Add Honey into the well.

  9. Fold mixture together and avoid over mixing.  Mixture should be Shaggy and Crumbly and wet in spots.

  10. Pour Dough onto floured work surface.

  11. With generously floured hands gently work the mixture together.

  12. Flatten dough into a rectangle approx. 1/2 to 3/4 of an inch thick with floured hands or floured rolling pin.

  13. Fold Rectangle into 3rd’s.  Dough will stick to counter top use a pastry scraper or pastry spatula to lift from counter and fold from the left then from the right creating 3 layers.  (repeat steps 12 & 13 -  5 to 6 times).

  14. Finally Flatten Dough into a Rectangle about an inch thick.

  15. Cut into 6 square Biscuits.

  16. Place onto a parchment papered Baking Sheet.

  17. Using a Pastry Brush apply the egg wash liberally to the tops and sides.

  18. Add your toppings onto egg glaze.

  19. Bake for 18 to 23 minutes or until golden brown.


Egg Glaze


  1. Add Large Egg and Oil to Bowl or Container.

  2. Whisk ingredients until well blended.






Mountain Mama’s Oyster Mushroom Country Gravy


2 Tablespoons Butter

2 to 3 Table Spoons All Purpose Flour

1 teaspoon Garlic powder

1 teaspoon Onion powder

2 Cups Veggie Broth

1 Cup Whole Milk

1 LB. Italian, White or Blue Oyster Mushrooms.   (Any Mushroom may be substituted.)

Pepper and Salt to your desired taste.

2 Table Spoons Olive Oil (for sautéed mushrooms)


The Mushrooms


  1. Heat frying pan to medium with 2 Tablespoons of Olive Oil.

  2. Add and Sauté the Mushrooms over medium to medium high heat until tender or browned and caramelized.



The Gravy


  1. Heat pan to medium.

  2. Melt Butter.

  3. Add Flour Gradually to the Butter form a paste / (Rue)

  4. Slowly add Veggie Broth to the Rue stirring constantly

  5. Slowly add the Milk to the mixture stirring constantly

  6. Add  Garlic and Onion Powder.

  7. Stir Constantly until Gravy begins to bubble.

  8. Reduce Heat to low

  9. Add Sautéed Mushrooms

  10. Serve over Biscuits or any other delicious meal.
